Kefir Bowls

I have been making kefir for quite a few years now – probably round five or six. For the first of those years, I drank a cup of kefir every morning after my lemon-hot water. These days, I prefer to add kefir to my smoothies, and I do like a smoothie every day because they are like having dessert for breakfast.

Antony decided a while back that he also wants to have kefir, and so the Kefir Bowl was created. I simply cut up a combination of fruit, poured over kefir, and added a sprinkle of nuts and seeds. From the first bowl, it was a hit. 

I stick to my smoothies (which are actually more like mousse) as they are just so heavenly. And when I do have a kefir bowl, my version is different from Antony’s. I use kefir that has been made with half cream and half milk – so it tastes like extra creamy Greek yogurt. The consistency varies depending on the cream I use. I stir berries and a blend of stevia and erythritol into the kefir. I then make a quick granola: crumbled seed crackers, toasted coconut flakes, activated almonds, vanilla powder, a tiny pinch of Maldon sea salt flakes, a little stevia-erythritol mix and a drizzle of MCT oil so it all sticks together. It’s a bliss in a bowl. I will do a separate post on this to do it full justice. 

So back to Antony’s Kefir Bowls. He loves a mix of fruit. I use a combination of the following: grapefruit, pineapple, strawberries, blackberries, peaches, kiwi and melon. He also loves lots of nuts, seeds and honey. To make this bowl low carb, I suggest using only berries, and erythritol/xylitol/stevia syrup instead of honey. I’ve also been adding fermented bee pollen, which apparently has many beneficial properties. I, however, appear to be sensitive to pollen so I avoid it.

Kefir Bowl

*One generous breakfast bowl*

Ingredients:

  • 1 cup               Kefir (or yogurt)
  • 1 cup               Fresh Fruit, cut into chunks
  • 25g                 Mixed Seeds (flax, sesame, pumpkin, sunflower, chia, poppy)
  • 25g                 Mixed Nuts (I use activated almonds & macadamia nuts)
  • 1 Tbsp             Honey (or low carb syrup of choice)

Method:

  • Pour Kefir into a bowl.
  • Place fruit in a layer on top. For example, I use 1 slice of pineapple, half a dessert peach and five strawberries.
  • Sprinkle nuts and seeds over.
  • Drizzle honey over.
  • Dig in.
